To comply with pitta and vata dosha, here's what I concoct when craving curry:
For 2-3 servings:
- 1 chicken breast, cut in 1.5" cubes
- ghee
- 150 ml of coconut milk
- 2 cups of light chicken stock (made it with the breast bone)
Paste of:
1 tsp fennel seeds
1 tsp coriander seeds
a little bit of cardamom
1 cm of fresh ginger
4 cm of fresh turmeric, the size of index finger
And a bunch of coriander leaves
First ghee, then spice paste, saute in 3 minutes. Put the chicken in. Wait for around 3 minutes then pour 1/2 cup of chicken stock, then the coconut milk. And then the rest of chicken stock. I seasoned with sea salt and a little bit sugar. Yum!
